Any school child could probably tell you that the disease scurvy (causing bleeding gums, spotty skin, and general nastiness) is caused by a vitamin C deficiency.\u00a0 We\u2019ve all heard how things finally got better when those historic mariners sat around sucking limes.\u00a0 (Where is the team mom with those orange wedges when you need them?) But I never really understood <em>how<\/em> Vitamin C actually saves the day &#8211; until I came across the write-up of a biomolecular archaeology symposium in Science magazine (a U.K. researcher is finding some evidence for scurvy by looking at the proteins in 17th and 18th century sailor skeletons), and which explained the basic connection.<\/p>\n<p>The answer, it turns out, is <a href=\"http:\/\/en.wikipedia.org\/wiki\/Collagen\" target=\"_blank\" rel=\"noopener noreferrer\"><strong>collagen<\/strong><\/a> \u2013 the most abundant protein in the human body.\u00a0 Twisted collagen fibers are in our hair, our tissues, even our bones.\u00a0 Anything that messes with this protein signals is bad news for the body \u2013 and scurvy is just that type of news.\u00a0 Collagen is chock full of <a href=\"http:\/\/en.wikipedia.org\/wiki\/Proline\" target=\"_blank\" rel=\"noopener noreferrer\"><strong>proline<\/strong><\/a>, one of the of the amino acid building blocks that make up all proteins.\u00a0 So it stands to reason that anything that messes with proline messes up collagen, and before you know it, it\u2019s a scurvy mess.<\/p>\n<figure id=\"attachment_976\" aria-describedby=\"caption-attachment-976\" style=\"width: 124px\" class=\"wp-caption alignleft\"><a href=\"http:\/\/en.wikipedia.org\/wiki\/Proline\"><img loading=\"lazy\" decoding=\"async\" class=\"size-thumbnail wp-image-976\" title=\"proline\" src=\"https:\/\/mlml.sjsu.edu\/student-life\/wp-content\/uploads\/sites\/75\/2008\/11\/proline.png?w=124\" alt=\"proline\" width=\"124\" height=\"96\" srcset=\"https:\/\/mlml.sjsu.edu\/student-life\/wp-content\/uploads\/sites\/75\/2008\/11\/proline.png 777w, https:\/\/mlml.sjsu.edu\/student-life\/wp-content\/uploads\/sites\/75\/2008\/11\/proline-300x232.png 300w, https:\/\/mlml.sjsu.edu\/student-life\/wp-content\/uploads\/sites\/75\/2008\/11\/proline-768x593.png 768w\" sizes=\"auto, (max-width: 124px) 100vw, 124px\" \/><\/a><figcaption id=\"caption-attachment-976\" class=\"wp-caption-text\">Your dime-a-dozen proline molecule<\/figcaption><\/figure>\n<p>So what goes wrong?\u00a0 Well, some proline molecules need hydroxyl groups added to them to help reinforce structure of the whole protein molecule.\u00a0 A hydroxyl is simply an oxygen and hydrogen hanging out and sharing electrons.\u00a0 These hydroxyl groups don\u2019t just appear on proline, enzymes have to put them there.\u00a0 And one of the cofactors (helpers) that these enzymes need to stick on the hydroxyl groups is \u2013 wait for it\u00a0 \u2013 Vitamin C!<\/p>\n<p>There you have it \u2013 without the right tools (Vitamin C) to help you construct proper nuts and bolts (proline), your beams (collagen fibers) won\u2019t be structurally sound.<\/p>\n<figure id=\"attachment_979\" aria-describedby=\"caption-attachment-979\" style=\"width: 128px\" class=\"wp-caption alignleft\"><a href=\"http:\/\/en.wikipedia.org\/wiki\/Hydroxyproline\"><img loading=\"lazy\" decoding=\"async\" class=\"size-thumbnail wp-image-979\" title=\"hydroxyproline1\" src=\"https:\/\/mlml.sjsu.edu\/student-life\/wp-content\/uploads\/sites\/75\/2008\/11\/hydroxyproline1.png?w=128\" alt=\"Proline rocking an extra hydroxyl (OH) group - work it!\" width=\"128\" height=\"80\" \/><\/a><figcaption id=\"caption-attachment-979\" class=\"wp-caption-text\">Proline rocking an extra hydroxyl (OH) group - work it!<\/figcaption><\/figure>\n<p>And without a good framework, whatever you try to build is going to have some serious problems (like say, a human body).\u00a0 <a href=\"http:\/\/www.newsweek.com\/id\/162267\/output\/print\" target=\"_blank\" rel=\"noopener noreferrer\">The builders of the Titanic should have known better<\/a> than to go against this string of logic, just to throw in another maritime example\u2026<\/p>\n<p>So now when mom tells you to drink that orange juice, you can thank her for saving you from gum disease and further misery \u2013 <em>and<\/em> you can tell her how.\u00a0 Those poor sailors eating things like hardtack (which by all accounts, had the nutritional value of\u00a0 thinly disguised cardboard) didn\u2019t stand a chance.
